WIAW: Good Groceries

G’day eaters!

This week is kicking my butt a little. As in, I fell asleep as soon as I climbed into bed at 10pm last night. I tried so hard to stay awake, but I failed miserably.

(Side note: my mind is in such work mode that I almost typed “10p” instead of “10pm,” because that’s how we write times at work. And I spend a lot of time writing out times.)

So here’s yesterday’s food.

Breakfast:

I felt the need to eat somewhat healthy yesterday since I barely even thought about vegetables while at the beach. Also, I was dying to eat an apricot.

Apricots are one of my favorite fruits, but I never buy them because they’re so expensive. And because half their weight is air and a pit.

Sadly, these apricots weren’t too great, which only reaffirmed my thought that I like them dried better than fresh.

Lunch:

As I was unpacking groceries on Monday I was dreaming up this lunch. I love breakfast nachos and having fresh avocado, homegrown jalapenos, and black bean dip from Trader Joe’s makes them all the better.

Dinner:

I got the idea for this recipe from Kath’s blog. I was drawn to it because it’s so versatile and we always have chicken in the freezer. Here’s my scaled down version with white kidney beans, grape tomatoes, basil, balsamic vinegar, and a bone-in skin-on chicken thigh and leg.

Bean and Chicken Bake

Yields 2 servings

1 can beans, drained and rinsed

2 c vegetables, chopped

2 T fresh herbs, chopped

1 T oil, plus a little extra

1 T acid

2 chicken pieces

salt and pepper

Mix the beans, vegetable, herbs, oil, and acid in a baking dish with salt and pepper.

Rub oil over the tops of the chicken and add salt and pepper. Place the chicken in the baking dish on top of the bean mixture.

Bake at 425F for 35-45 minutes, depending what parts of the chicken you use.

This dinner ended up being delicious, without being too wintery. And it was a great way to use up our small stash of tomatoes, since neither Leon nor I eat raw tomatoes.

Snacks:

Throughout the day I kept dipping my hand into a tub of Trader Joe’s animal crackers and sipping some of my homebrewed kombucha.

And there you have it — a pretty normal day of eats. If I was more sensible about my snacking I would have kept my hands out of the cookie jar and instead made myself a solid afternoon snack, but that didn’t happen. Not yesterday. not today. And I won’t have time for it tomorrow, either.

WIAW: Best Decisions

Hellooooo eaters!

Have I ever told you that in my head when I say that I sound like Oprah? Have I ever told you that whenever I sing along with a song, as long as I don’t sing too loudly, in my head it sounds like I’m harmonizing almost perfectly?

Yeah, neither of those things will ever be true outside my head.

But enough about what’s in my head. Here’s what’s on my plate!


Breakfast:

I splurged a little and bought 2 lbs of blueberries this week. It was, by far, my best purchase of the week.

Lunch:

A berry, Greek yogurt, pb, and spinach smoothie with a little something extra.

Can we talk about this smoothie? Because it was phenomenal for a couple of reasons.

First, it’s just my classic Really Extra Awesome Smoothie with pb instead of avocado and spinach instead of kale. And without the protein powder. But what makes it phenomenal is that I added half a bag of spinach — wheeeee greens! — and for the liquid I added some Zevia Black Cherry soda.

Zevia is my new thing and in my head it’s just like flavored club soda (please don’t tell me if it’s not). And adding half a can to my smoothie was the best decision. It added a great flavor and some nice, noticeable fizz.

I like fizz.

And since I skipped the protein powder, I had a couple of slices of Applegate turkey on the side.

Snack:

I shoved a handful of trail mix in my mouth at some point.

Dinner:

Mustard baked chicken drumstick with buttery, cheesy spaghetti squash.

Leon cooked and I love him for it. Not only does he make such better baked chicken than I do, but he had the bright idea to bake the spaghetti squash with basil, garlic, and butter.

We added more butter and some parmesan after it was scraped.

So delicious. It was the perfect summer comfort meal.

Dessert:

And as I’ve been writing this Leon and I have been spooning big hunks of Ben & Jerry’s chocolate fudge brownie ice cream into our mouths.

Now talk about a good decision.

WIAW: Beerface

Hiya eaters!

I hope I didn’t overwhelm you with coupons yesterday. It’s a lot to take in, but even if you just take in a little bit you’ll be guaranteed to save money.

And who doesn’t like saving money?

As my job situation changes I am becoming very conscious of every penny I spend.

(I really need to stop being cryptic about my jobs. I promise, I will very very soon.)

And speaking of work, yesterday was my day off. As I mentioned on Monday, I get every Sunday off. My other day off comes on Tuesdays. I’m not crazy about the day off-work-day off sandwich, but it’ll do.


Pre-Crossfit:

Apple and pb. But now that it’s plum season you can expect to start seeming pretty pictures of gorgeous fruit soon.

That reminds me that I need to get sunflower seed butter. It goes so well with stone fruit.

Crossfit:

I went to my beloved 9:30am class and it was great.

A little running.

Some great work on pistols and GHD sit ups.

A bunch of split jerks.

And I made some really good progress on my wall ball shots.

I have this weird thing where I am completely capable of throwing the 10 lbs wall ball up to the 10’ target IF the target is on the wall. But if it’s to our front targets, which are just wood boards essentially floating in air, I can’t hit it. Sure, I can throw the ball plenty high, but it doesn’t make contact with the target, which is a no rep.

After a couple pointers and a wall ball tabata, I could seem some very nice improvement.

Breakfast:

Honestly, you should know by now that I’ll take any excuse I can to 1) eat with my hands and 2) eat Mexican food.

I should have added some cilantro from my garden to really spice it up.

Lunch:

I never claim to eat normal foods. But even though this was a weird lunch (and I didn’t eat it until almost 4pm because I never got hungry), it hit all the right tastes for me.

Snack:

While Leon was grilling dinner, I got a little hungry, so I sipped on a beer. Not the most sensible snack, but it was hot and I was thirsty.

WIAW: Back On Track

G’day eaters!

It’s Wednesday. I’m exhausted and the hard part of my week hasn’t even started yet.

How are you doing?

Ha! Sorry to complain. I’m adjusting to having two jobs (I’ll tell you more about that eventually) and still trying to figure out how to fit the rest of my life around them, so I’m a little worse for wear right now.

I’m especially worse for wear because, after a few too many days of a few too many treats and a little too little movement, I’m trying to tighten up my healthy intentions again. And I don’t care how healthy you eat or how hard you workout, getting back on track after a little detour is always hard.

It’s especially hard when all you want to eat is pizza and cake and a job that makes you especially sedentary.


Breakfast:

I had leftover leeks that needed using and I figured they would add enough flavor to my eggs to make this very healthy, but very over-eaten breakfast more palatable. I also added some cinnamon to my apple for the same reason.

Lunch:

Leftover moo shu vegetables and sweet and sour chicken.

Not the healthiest (with the deep fried sweet and sour chicken), but the moo shu vegetables weren’t too bad a choice.

I followed this up with lots and lots of mints, because this was a little stinky for an office lunch.

Pre-Crossfit:

Half an apple and pb with a GNC wheybolic protein shake to fuel me through my workout.

Crossfit:

We did a burpee ladder yesterday and it was a surprising ass kicker.

The ladder goes: 1 burpee, 1 breath, 2 burpees, 2 breathes, 3 burpees, 3 breathes, etc. all the way up to 10 and back down. (You, of course, could breathe as much as you wanted while performing the burpees.)

I really thought it would be easy, because I can easily do 10 burpees in a row, but the breathing part kicked my ass. My body wanted to breath fast and shallow, but to maximize my rest time, I wanted to take slow and deep breathes.

I was fighting a losing battle.

Dinner:

I really wanted a frozen pizza, but we had a ton of homegrown lettuce that needed to be eaten up and, ya know, frozen pizza isn’t really the healthiest meal.

I compromised with myself by saving that if I got hungry after dinner I could have dessert — vanilla pound cake with vanilla Greek yogurt and berries — but I never got hungry.

So I ended up with a pretty damn healthy day. I managed to resist the candy dish full of peanut M&Ms, too.

In a couple of days I know that my cravings for junk food will pass and I’ll be back to my usual 75/25 (or 80/20, if I’m feeling ambitious) balance. But until then, I’ll keep chugging water and reminding myself that no one has ever died from not eating enough candy.

Weekend Food

Hi eaters!

I love weekends, don’t you?

Working in retail means I almost never get two days in a row off and the fact that I get Sundays off is just a happy coincidence. And now with a second job I might never get two days in a row off again.

This week, though, I lucked out. I got Sunday and Monday totally free from work.

Beyond loving the freedom to nap and read and take long walks with my dog, I also love the freedom to cook.

On the weekends I get to eat big breakfasts.weekend food1

I get time to gradually get hungry and to think about what I really want to eat before I stuff something in my mouth.

I get to cook more elaborate meals and eat earlier.

All of these things are vastly different from the weekdays when, more often than I would like to admit, I eat lunch (and change my pants) in the car. And lately, as I haven’t had time to shop or meal plan properly, that lunch has been a grilled chicken sandwich from Chik-fil-A way too often for my comfort level.

During the week I almost always eat eggs with fruit for breakfast and most days I am just shy of hitting my water intake goal for the day. (I have a 24oz water bottle and aim to drink it three times a day.)

My go to snack is mixed nuts, which is a very satiating snack, (as I pointed out last week) but not exactly thrilling.

All of these things are nice and healthy and easy to eat, but man, do they get boring. A few weeks ago I was so sick of my usual, nice, healthy, easy food that I would have rather not eaten than eat the same thing again. (I ate a lot of takeout that week.)

So weekends are my saving grace. They let me re-charge my batteries and stuff my face with the most delicious food so I’m ready to face the week ahead, which are always guaranteed to be filled with car lunches and speeding through yellow lights (sorry, papa) and hurried dog walks.

WIAW: Lots of Eggs

Hello eaters!

It is Wednesday, right?

I didn’t do anything on Monday and will work on Saturday, so I keep forgetting what day it is. But I keep seeing lots of WIAW (What I Ate Wednesday) posts going up, so I’ll follow the crowd.


Breakfast:

I promise I didn’t plan to eat two of my favorite seasonal foods right after I posted about them. But they were delicious (though that plum would have been better with sunflower butter rather than peanut butter).

Oh, and I added a couple of dollops of spicy mustard to my eggs before I scrambed them for some extra flavor.

Lunch:

Leon and I keep thinking that our fridge is over flowing with things, but in reality we have a ton of produce, a few random leftovers, and almost no protein. Hence why I’m eating eggs two meals in a row.

We got to choose between running or rowing and I would have run, but after a warm up of 10 minutes of jump roping I knew my shitty shins couldn’t handle it.

Honestly, I don’t know which was better. I wanted to die many times throughout those 5,000 meters.

Dinner:

I feel like it’s been raining for weeks straight, so Leon and I were thrilled to get to grill last night. We split this big plate of grilled vegetables.

Fyi, we buy whole healthy chickens from Earth Fare and then Leon butchers them. Not only are they cheaper than at Whole Foods (and way cheaper than buying bags of chicken breasts), but they’re also much bigger from Earth Fare. This was, by far, the biggest breast we’ve ever gotten.

Dessert:

A few beers with a friend, because I’m still in denial a bit that I’m done with college.

And I was home before midnight. Man, do I love getting a full night sleep.

Yesterday marked the one year anniversary of Leon and I bringing Charlie home. I can’t believe it’s been a year.

Oh, has it been a wonderful year. I want to do a whole post about what having a dog has changed for us, but I think I’ll save that for his birthday.

Thesis Eggs

Holy mole-y, eaters!

I just finished my thesis. My 106-page, sweat, tears, and butter-filled work of foodie, neurotic passion is done.

Last night I edited out the last typos and checked all the margins and now I’m done. It’s bizarre that this thing that I’ve been thinking about and scratching out for almost a year now is finally complete. It feels too easy.

And since I know that I have been dangling this vague project in front of you for months, peppering my posts with off-handed references and talk of my “thesis recipes,” I have decided to give you a little taste of what has consumed so much of my time for months.

This is the first story in my thesis. Please excuse me if this is self-indulgent of me. If you’re not interested, check back on Wednesday when I will actually be doing a WIAW.

“What if I don’t make it,” I often asked myself in the days after I graduated high school, when graduation and getting into college were no longer gleaming gems floating over my head like in a video game.

“What if I screw up? What if I can’t do it? What if… What if… What if… What if…”

All the probable, improbable, awkward, terrifying, and fantastical possibilities that could/would become the life I was creating for myself in that 11’ by 10’ off-white cinderblock dorm room that I would share with one other girl who I’d never met, circled in my head like water that won’t go down a drain. No number of self-help, college survival books that I read while trying to fill that last, hot, endless summer gave me answers to sink my teeth into.

“Be outgoing.” “Don’t steal your roommate’s food and confront them if they steal yours.” “Join clubs.” “Take whatever classes interest you.” “Don’t feel bad if you don’t know your major the first day.”

All of it rang more phony and cheap than the Ramen noodles they encouraged me to buy by the boxful.

I wanted to know that I was going to be okay. I wanted to know that this new life that I had purposely chosen to make so far away from everyone and every thing I had ever known was going to be a good one. I wanted to know that I wouldn’t look back on College — that weighty and oft-recalled time in so many people’s lives — and regret anything, while also not looking back and thinking they were the best days of my life.

I wanted to know.

But I didn’t, so I set about preparing myself for everything that could happen by buying a wireless printer and a new backpack with lots of pockets and a duvet cover that matched the little rugs I bought and several eclectic-looking plates and bowls and a rice cooker and a decorative trunk for my shoes and and and and and and and. Until I was sure not a single thing else could fit in my half of the 10’ by 11’ off-white cinderblock room that I was going to be sharing with another girl that I’d never met, who ended up bringing a black light and a chair and few other things.

Somewhere between buying two sets of cream colored twin extra long sheet sets and picking out the extra large mini-fridge, I started to know I knew something.

I knew how to feed myself. I knew how to do my own laundry. I knew how to get myself up for class in the morning. I knew how to write papers with appropriate MLA citations. I had a car and I knew how to fill it up with gas and when to get an oil change.

These things I deemed the basic, fundamental life skills that I would need to survive. Because of these things, I convinced myself that I wouldn’t die or in any other way totally fuck up College.

I knew that even though I’d never met the other girl with whom I was to share the 10’ by 11’ room, I had talked to her online and she seemed nice enough. So I knew I was going to be friends with her and eat in the dining hall with her, at least until I had found other friends. I knew that I wanted to write for the newspaper and that someone could help me figure out how to do that. I knew that I had enough money to not have to turn down social invitations for dinners and lunches out or movies on rainy days or shopping trips. I knew that I could offer to drive and that people would like that. I knew that I was showing up to College with a small amount of liquor, so I didn’t have to worry about finding someone of age immediately.

These things I deemed less basic and fundamental, but almost equally important in my pursuit of not screwing up College.

So whenever the “What if…” started circling and circling, but refusing to drain, I poured these facts that “I knew” in like Drain-o. I poured and poured and repeated and rephrased until the “I knew”s so far out-measured the “What if…”s that the crippling, anxiety-producing, all consuming blockage was forced out and the drain could drain and the sink emptied and I could breathe.

Scrambled Eggs

Yields 1 serving

Scrambled eggs were the first thing I ever learned to cook. Before I could do anything I could scramble an egg. And while the method I use to make scrambled eggs has changed pretty drastically over the years, it still remains one of my most made, most fundamental recipes.

Ingredients:

2 whole, fresh eggs

salt and pepper

oil/non-stick cooking spray

Heat a (teflon) pan to medium-low heat. Crack both eggs into the pan, wiping out the inside of the shells to detach all of the whites from the membrane.

Quickly break the yolks and whisk the eggs together using a rubber spatula or wooden spoon. Whisk quickly, taking care to scrape the bottom of the pan, every 30 seconds or so, until the eggs start to set up.

Turn off the heat of the stove, leaving the pan on the burner. Add salt and pepper and whisk continually until the eggs have reached the desired consistency.

WIAW: Magical Mexican Soup

G’day eaters!

I want to start off by saying a big ole Congratulations to Jenn, the host of WIAW, for getting knocked up!

Everyone around me seems to be getting pregnant. It’s awesome and all, but…

I really hope it’s not contagious.

This is my new typical breakfast.

Yup, I’m still on the scrambled eggs and cooked veg breakfast.

Side note — these are the smallest, cutest clementines I’ve ever seen. I finally feel like I’m getting “cuties,” not like those small-ish oranges I’ve been calling “cuties” all these years.

Look! I did something “healthy living blogger”-like and made my lunch the night before while I was making breakfast. Let’s ignore the fact that I ate it at home.

Let’s play the game where you don’t scold me for buying a giant bag of Twizzlers because it was $1 and I won’t pretend I only ate one serving.

Dinner:

This meal knocked my socks off! That’s real talk, eaters. Real talk.

First, I made the pork tamales over the weekend as part of my thesis. And while they were good on the day I made them, they were so much better a few days later when the exhaustion of making them had worn off.

Second, this soup was pure magic. I wanted to make some sort of lazy tortilla soup so I mixed a can of fire roasted diced tomatoes and then leftover “broth” from the tamale meat (which was the pork cooking water pureed with cooked garlic and cooked onion). I added a little bit of spice and pureed the whole deal again.

And by the grace of the Mexican food gods (who I imagine have heads made out of grilled cheese sandwiches) it ab-so-freaking-lutely rocked!

WIAW: Put a Fried Egg On It

Hiya eaters!

I haven’t done a WIAW in a hot minute, so why not, right?

Oh, and I didn’t have anything exciting to blog about because I eat a lot of leftovers that I top with fried eggs. Because really, what doesn’t taste better with a little runny yolk? (I should add that to my food manifesto.)

Seriously, this was a coincidence. I didn’t remember what I ate for breakfast yesterday when I wrote that intro.

On the side I also had a Clementine (because all those Brussels sprouts are only 1 Zone block of carbs, can I get a #HotDamnHoory!).

Since we all know that grocery shopping on an empty stomach is bad, so I treated myself to the Whole Foods hot bar. For the first time since before Christmas.

My friend Polly is a freaking angel and brought me a big bag of my FAVORITE gummies from England — wine gums! So I ate a few too many of these.

Dinner:

I had a kneading breakthrough last week, so I had to see if extra kneading improved my pizza dough.

It totally dinner. The chorizo helped, too.

And that officially makes this pizza the second tastiest thesis homework yet! (Though I’m baking cinnamon rolls tomorrow, so that might change.)

WIAW: Squat Tabatas

Hiya eaters!

So I had a realization today: I’m bored.

My homework is done. I didn’t work today. I don’t have errands or crafts to do.

So you know what I did to fill my time? I did lots of dishes.

This is what it has come to.


Breakfast:

Two sunny side up eggs, a clementine, and a slice of Irish soda bread with a healthy schmear of butter.

Leon made corned beef and soda bread on Monday night, so I just had to have some leftover soda bread for breakfast. Schmeared with a thick pat of really good local butter, of course.

Dog walk:

Charlie is getting progressively crazier on his walks. His new trick yesterday was running up the side of a hill and then body surfing down it.

I would probably be annoyed if he wasn’t the cutest little dummy.

Lunch:

I forgot to take a picture because I didn’t eat until something like 3:30. But it was a salad of red leaf lettuce topped with orange bell pepper, avocado, bacon, cheddar cheese, and steamed broccoli.

It was delicious. But then, when isn’t bacon on a salad a good thing?

Crossfit:

Last night’s class was a lower body killer!

Warm up: 3 rounds

Run ½ mile

10 empty barbell (which is 30#) behind the head overhead presses

15 empty barbell good mornings

10 empty barbell overhead squats

Yup, it’s the warmest warm up in town!

(That’s what we all say whenever the warm up is especially hard.)

WOD:

#HoorayCrossfit!

O’m’gah! Those squats killed me. I seriously almost couldn’t walk after each tabata. But, despite feeling like a cripple turtle on the run, I was able to run an 8:50 mile. Sure, that’s 28 seconds slower than my PR, but I’ll take it.

Appetizer:

Lay's, you will be the death of me.

Why do I buy chips? It never ends well.

Dinner:

Blackened catfish and roasted broccoli and brussels sprouts.

Sometimes Leon and I pretend to be healthy by eating fish and vegetables.

After dinner snack:

A slice of the cookie bar-cake thing I made yesterday.

Following my manifesto beliefs, this is not dessert because it’s actually almost healthy. I’ll post the recipe tomorrow.
